Open Fire Cooking

Want to know something shocking? We haven’t dined out in years! If you love dining out, not being able to would be a bummer! However, when you don’t have a choice as it is in our case. Why not create an extraordinary at home experience?

Which is what we have done. I am blessed to have had a mom who introduced me to cooking at a young age and when I reached fifteen, I was able to cook meals for our family of eight. I am surrounded with matriarchs who loved gardening and got my love for good food from them.

This spring I’ve been attracted to flavors like ginger, dandelion, and fresh leafy greens. Asparagus is usually on that list but since our patch is only in its second year, I’m allowing it to go to seed again this year to help it establish itself.

During the warm weather season, we love to be outdoors and cooking over an open fire has become a favorite. Personally, I love it because it slows you down after busy days and a nice way to slip into those deliscious summer nights.

  • 1/2 Organic grass-fed chicken from Stutzman’s Farm

    1/4 cup raw ginger,

    4-5 cloves of garlic,

    1/4 cup basil pesto

    1 tsp uneradicated salt

    1/2 tsp black pepper

    Blend the fresh herbs and spices together, slather all over the chicken and marinate for a minimum of 2 hours. If you use dried ingredients, it will only take about a fourth. Slow roast for approx. 30 minutes and then let is rest in a pan in butter on low for another 10-15 minutes.

    PS: I don’t create recipes for a living and keep that in mind and use your own knowledge and intuition if you try this recipe.

    If you want to try the wings they were marinated in raw sugar, salt, pepper, clean ketchup, smoked paprika, and chili powder. Made in a cast-iron pan and roasted in butter.

  • PLANTS: soil quality equals plant nutritional quality. Better soil equals better food.

    MEATS: The living conditions of an animal is raised in makes a difference, aka, pasture grazing vs feed lots and barns. Also, if the animals’ food source is shitty, that’s what the food will be. Look for happy animals eating quality grass and or grain.

    Our Criteria for ALL food: Non gmo, corn free, pesticide free and no hormones and ect. In its raw unaltered form.

    SHOP LOCAL: Knowing the person who raises your food. Not only can you ask questions about how it raised. Having direct access to your food increases security and helps insures you against supply and transport issues.

    NO ADDITIVES: This eliminates a lot of items on the grocery shelves, but it is there and can be found.

    UNPROCESSED: Food in its original form is mwah!
