Rustic Blackened Tomato Paste
Evening temperatures are cooler and today if you were to step into our kitchen you would be greeted with warmth and the aroma of blackened tomatoes and garlic simmering on our stovetop. As you may know, I enjoy outdoor cooking and finding interesting ways to preserve the flavors of summer for the season when the fire is flickering in the wood stove and life has turned inward.
This is my first year preserving blackened tomato’s and it is an experiment and fingers crossed will go well! So far, I am speechless at how charring the skin a tomato changes its flavor and I can’t wait to add this as a seasoning to tomato based soups, marinades, fajitas and home-made pizza.

Fresh home-grown organic Roma tomatoes.
Open fire pit for cooking.
Olive to drizzle over the tomatoes while on the fire.
Charr to desired color.
Simmer on your stovetop with a handful a garlic until it’s a sauce.
You can either freeze it in icecubes or oil packing it and store in a refridgerated space.
